    There's nothing quite as comforting as a bowl of hot, nourishing soup on a cold day. These easy soup recipes are a cinch to make and feature loads of fresh vegetables, good broth, and plenty of herbs.

    Kale and White Bean Soup

    This simple soup is deeply satisfying. It has savory broth seasoned with bay leaf and rosemary and dotted with aromatic vegetables and kale.

    Tips

    Most soups follow the same basic method of preparation. First, you sauté or sweat the aromatics in cooking fat. Then, add vegetables or meat. Add your liquid, usually bone broth or chicken broth.  Then, you simmer it all together.

    Add cooked beans and grains as well as tender herbs and leafy greens toward the end of cooking. Cooked beans and grains may soak up too much liquid if added earlier. Leafy greens and herbs can overcook quickly. Adding them toward the end of cooking improves the soup.

    For puréed soups, you'll take the additional step of puréeing or blending the soup until smooth. This works well for vegetable soups and cream soups. An immersion blender is the easiest option. It lets you purée the soup right in the pot.
