    Seasonal Spring Vegetables

    Root vegetables are in season in spring. You'll usually find young roots, such as little carrots, salad turnips, and radishes.

    Greens include tender lettuces, watercress, arugula, and spinach. You might also find baby kale, Swiss chard, and collard greens.

    Herbs begin to peak in spring - especially tender herbs that benefit from cool weather. Look for parsley, chives, mint, and lovage.

    Leeks, young garlic, scallions, and spring onions arrive in abundance. They're delicious stir-fried, added to soups, or blended into pestos.

    Asparagus is a springtime favorite. While green asparagus is the most common, you can also find purple and white asparagus in some markets.

    Peas are at their peak during spring. English peas are perfect for soups, risotto, or simply served with butter. Snow peas are delicious in stir-fries. Snap peas are perfect on their own or served with a dip, like hummus.

    Wild mushrooms are often widely available in the spring, thanks to the cool weather and plentiful rain.
