    Tips for Cooking Poultry

    When cooking with poultry, there are a few things to keep in mind.  Buying whole birds, such as a whole chicken or duck, is less expensive than buying poultry in parts, such as chicken breasts or thighs.

    Additionally, the poultry you typically find at the grocery store comes from industrial farms.  The birds often live in cramped conditions and are subject to the routine use of antibiotics, which many experts believe is linked to the rise of drug-resistant bacteria.

    When possible, choose birds that are raised on pasture rather than indoors in barns.  These birds produce more flavorful and more nutritious meat than birds raised in confinement.
