Cranberry Sauce with Kumquats

Not the best of pictures, but, don’t worry: I’ll be making (and photographing) this sauce again soon!   The sauce is sweet and decidedly perfumed with the unique flavor of wildflower honey.

You’ll need:

  • 1 lb Cranberries, Fresh or Frozen
  • 1 Cup Sliced Kumquats, Fresh or Frozen
  • 1 Cinnamon Stick
  • ½ C Wildflower Honey
  • ½ C Apple Cider or Juice

Rinse and pick through the cranberries, discarding any soft ones.   Add the cranberries to a sauce pan and turn the heat to medium-low.   Add the cider, honey, kumquats and cinnamon stick.   Continue to heat, stirring periodically, until all of the cranberries have burst and the sauce thickens slightly.   Remove from heat and refrigerate.

  1. How would this recipe go using dried cranberries and reconstituting them?? we cannot get fresh or frozen in australia??
