In the spring and summer months, when cows are grazing on fresh, green grass raw ice cream is a staple in our home. Unlike conventional, cloyingly sweet ice creams, this ice cream is milder in is sweetness which allows you to more fully appreciate the flavor of fresh, raw cream and milk.

does anyone have trouble mixing honey in when the milk/cream is cold?? i find that honey doesn't mix well when added to something cold or is that just me?? so i've been adding maple syrup instead.

Tried the berry ice cream after trying the mint one and it came out so well . I did really like the vanilla bean that was in the mint one so I added that to the berry version here.

I made this yesterday with a variation - cherries and ground vanilla in place of the blackberries. Absolute heaven! I agree with other folks that the honey could easily be reduced without sacrificing flavor or enjoyment. This is my first time making raw dairy ice cream and it's the best-tasting thing to ever come out of my ice cream machine. Thank you!
