This is a lovely winter dessert. And, like the best desserts, it doesn't need a lot of sweetness. A little maple syrup brings out the flavor of the pears, while ginger and cardamom bring an elusive, mysterious note to the dessert.

Roasted Pears with Ginger and Cardamom

Ginger and cardamom bring a beautiful warming spice to this roasted pear recipe. It's delicious served with a dollop of creme fraiche or homemade Greek-style yogurt.

Ingredients

4 medium pears
¼ cup chopped pecans
¼ teaspoon ground ginger
¼ teaspoon ground cardamom
1 tablespoon maple syrup

Equipment

melon baller
baking dish

Instructions

Heat the oven to 350 F.
Cut the pears lengthwise, and then scoop out their seeds with a melon baller or spoon. Place them in a baking dish.
Fill the cavity with pecans, sprinkle with ginger and cardamom, and then drizzle with maple syrup.
Bake the pears until tender, 20 to 30 minutes. Serve warm.

Variations

Try poaching the pears instead. You can also poach the pears in wine or juice instead of roasting them.
