Combine the cabbage, bell pepper, jalapeños, grapefruit segments, green onions, and pepitas in a large mixing bowl. Toss lightly until the ingredients are well distributed.
For the Dressing
Add the lime juice, olive oil, salt, honey, mustard and hot sauce to a pint-sized jar and shake vigorously until the dressing becomes smooth and emulsifies.
Finishing the salad.
Drizzle the salad with the dressing, and wait for about 10 minutes, then serve. Store any leftovers in a tightly sealed container for up to 3 days.
