1tablespoonextra virgin olive oil
1mediumshallot(sliced thin)
2bunchescurly kale(trimmed and chopped coarsely)
½cupdried cherries
½cupsoft apple cider
1teaspoonapple cider vinegar
sea salt(as needed)
Instructions
Warm the olive oil in a wide skillet over medium-high heat, then stir in the sliced shallot. Cook the shallot in the oil until fragrant and softened - about 6 minutes.
Add the kale to the pan, and stir-fry for about 2 minutes until slightly wilted. Add the cherries, and then pour in the apple cider. Turn the heat down to medium and continue stirring until the kale is wilted. Drizzle in the apple cider vinegar, season with salt as needed, and serve warm.
