Delicately flavored with leafy greens, leeks, shiitake mushrooms, tahini and misoi, this sipping broth is rich in both minerals and protein. You can sip it on its own, as a light meal or snack, or serve it as a starter before a larger and more substantial meal.
Toss all the vegetables into a medium stock pot, and then pour in the chicken broth. Cover the pot, and bring to a simmer over medium-high heat. Turn down the heat to medium-low, and continue simmering the broth and vegetables until the kale wilts and turns bright green, about 8 minutes.
Remove the pot from the heat, stir in the tahini, miso and trace mineral supplement. Blend with an immersion blender until smooth. Salt the sipping broth as you like it, and serve it warm.
