The Real Food Summit – an online conference featuring 27 experts on real and traditional foods – convened this week and is wrapping up with its final presentations this morning. Doctors, farmers, noted authors and bloggers, all convened to discuss the merits and how-to’s of real food.
Joel Salatin of world-renowned holistic ranch Polyface Farms kicked off the summit with a talk that defined real food and analyzed the merits of properly raised animal foods. Jeffrey Smith of the Institute for Responsible Technology discusses genetically modified foods and – more importantly – how to spot them and how to avoid them, while Kaayla Daniel (author of the Whole Soy Story) discusses real and traditional foods in the context of empowering fertility.
I also enjoyed presenting on the subject of fermentation – my favorite art within the realm of traditional foods – discussing the merits of fermented foods, how we left the practice behind not too long ago, and how we can revive the art in our own kitchens.
