I know this is an old post, but I was curious about how the anti-nutrients in the whole wheat are neutralized without any sort of &quot;rest&quot; or &quot;souring&quot; time. If I wanted to add some time to allow the sourdough to break down the phytic acid, how much time would I need? And would that then make the pancakes too sour? At the moment I am experiementing, I currently have the starter (fairly bubbly), whole wheat and milk mixed and sitting in a warm spot, I will let it sit there until we need to eat breakfast and will then mix everything else in. Thank you for all of your work!
