2-style Tacos: Halibut & Beef

This soft taco recipe is easy to prepare and adaptable to fish, beef, chicken or even pork.     Serving a variety of meat is nice, coupled with a variety of toppings is nice too.   Coupling coconut oil with beef and halibut ensures plenty of good fats while the fresh vegetables and spice rub offer plenty of antioxidants and micronutrients.

    Ingredients

    • for the pan
    • 1 lb Halibut Steaks
    • 1 lb Flank Steak
    • 1 recipe Mexican-inspired Spice Rub
    • 2 Red Peppers
    • 2 Yellow Onions
    • 3 Tablespoons Coconut Oil or Pastured Lard
    • garnishes
    • 1 Small Yellow Cabbage, Chopped
    • 1 Small Head Loose-lead Lettuce, Chopped
    • 1 Small Bunch Cilantro, Chopped
    • 2 Avocados, Chopped
    • 2 Limes, Sliced Thin
    • Sour Cream
    • Raw Milk Cheddar Cheese
    • Fresh Salsa
    • Sprouted Corn Tortillas, or other Sprouted Grain Tortilla

    Instructions

    1. Separately, chop the halibut and the beef into bite-sized pieces.
    2. Separately, toss the halibut and beef into ½ cup spice rub, reserve.
    3. Clean the red peppers, removing the seeds and membranes then slice thinly.
    4. Thinly slice the onions.
    5. Heat 1 tablespoon fat in a very, very hot cast-iron skillet until it’s sizzling.
    6. Add peppers and onions, and stir-fry until they’re just blistered.

    8. Remove vegetables from the pan and keep warm.
    9. Add another tablespoon fat to the skillet. When the fat is sizzling, add the spiced chopped beef to the pan and stir-fry until done.
    10. Remove beef from the pan, add remaining oil and stir-fry halibut until done.
    11. Serve halibut with cabbage, cilantro & avocado and serve the steak with cheese, peppers and salsa.

      This look so good! I have sprouted tortillas and have to do some food shopping today, so I think I know the theme for my Mother’s day dinner- Hubby gets to choose menu tonight- he has a rough day and I want to make something he really likes. He is not a Mexican food fan, but I am slowly finding some foods in that vein he likes. Me?? I have not met an authentic Mexican food I did not like! Thanks for sharing!
