With regards to sodium, this is a comparison per 1 Tbsp:
• Kikkoman organic naturally brewed regular sodium: 990mg
• Whole Foods 365 Organic Shoyu Reduced sodium: 650mg
• This sauce: 720mg
So this falls under the category of reduced sodium AFAIC.
It has a unique flavor and color since it was aged in cedar wood casks for one year.
The flavor doesn't hit you over the head but it does add umami and a unique flavor. I like that the salt is lower.
I also tried Yamaroku Tsurubisihoa a popular, but expensive Soy Sauce (again, from Japan) and it is more typical, but quite robust. The two are quite different!
This "Nama Shoyu" is 59% cheaper, so you can afford to use more of it and amp up its flavor.
