Very nice! This is such a great, organized way description of cooking a steak. And that photo looks delicious - it's been a while since we've made steak, but it's going to have to go on the weekend menu.

As a recovering vegetarian (gave up after my last b-day with a 0), I was appaled at myself for forgetting how to do this simple but delish dish. Thanks, Jenny, for recovering the memory with thesimple guidelines.
If I may be so bold to suggest, try thowing in some mushrooms when you deglaze--they help absorb even more of the good stuff. And if you want to gild the lily, throw in a dab of Dijon and a little cream.
I'm going to take a cold shower now ;).

Wonderful tips! I had never thought of or heard of oiling the steak instead of the pan. It does make sense.

Our steaks come aged all ready and are SUPER yummy. I never knew how good steak tasted until we started getting grass feed beef lol! Next time I will try your lard tip, never done that before, we always use butter :) Thanks!

Wow! Thanks! My husband always makes our grassfed steaks because he was a line chef at a fancy farm-to-table restaurant in D.C. back in the day. As a former vegetarian, I've always been pretty ignorant about how to cook meat. No more. Now I can make a steak that rivals my honey's and do the family proud!
