Oeufs en Cocotte with Lox
Simple to prepare and rich with wholesome, healthy fats and vitamins, oeufs en cocotte, or baked eggs, require only a handful of ingredients, a few ramekins or a baking dish. The result is an elegant breakfast dish that takes only minutes to prepare – even young children can help by cracking an egg or sprinkling the dish with fresh cheese and ground pepper. And if you don’t care for lox or pecorino romano cheese, you can always substitute other flavors of your choosing: bacon, fresh herbs and cheddar make good additions. Sourdough French Toast
A hot skillet, stale bread, eggs, cream and maple syrup are all you need to prepare a simple sourdough French toast. It is nourishing, flavorful and a delightfully rich addition to the brunch table. This version of french toast makes use of sourdough bread with its wonderful and rich tartness, pairing it against a sweetness provided by maple syrup. I find that grade B maple syrup offers a more complex flavor for a better price than grade A maple syrup. Of course, one could omit maple syrup entirely from this recipe and serve it unsweetened, perhaps paired only with fruit and fresh cream for an equally charming breakfast that any mother is sure to love this Sunday. Coconut-dipped Strawberries
Lastly, I’d add a simple, nourishing fruit-based dessert to the brunch mix on Mother’s Day. Simply melt coconut oil, a touch of honey and the contents of one vanilla bean together until the mixture is well-combined, then dip strawberries in the coconut oil to coat and allow them to chill in the freezer a few moments to harden. Young children particularly enjoy preparing this recipe – dipping fresh ripe strawberries into just melted coconut oil. What better way to show their appreciation on mother’s day than with preparing a single, simple and flavorful dish for Mom.

Add some melted dark chocolate to your coconut dipping sauce and Voila, Chocolate dipped Strawberries.
That last recipe is a winner for me! I enjoy coconut milk with just fruit, but being it is mother’s day, adding some honey, vanilla, and yes – chocolate seems like a deal!
However, my parents left for Florida yesterday and won’t be back till Sunday evening…. so the coconut-dipped strawberries will have to wait but I will make them soon! We will be going out to dinner when I pick them up from the airport

Love the coconut dipped strawberries idea. I finally got my own Mom switched over to organic strawberries after years of trying .. she is delighted with the much improved taste and sweetness over conventional strawberries. She will love them even more with such a decadent dip!
