Meal Plan: 9/29 through 10/5

Pumpkins and winter squash are finally in season and I’m elated.   While I look forward to springtime asparagus and summer berries, nothing compares to autumn’s pumpkins and squash.   An added benefit is that they keep forever, helping us to consume local produce year-round.   Check out more Meal Plan Monday Menus here.

Monday

  • Breakfast: Oats with Kefir and Fresh Apples
  • Lunch: Out
  • Dinner: Zucchini Stuffed with Lamb & Quinoa, Tomato and Onion Salad, Yogurt, Melon
  • To-do: Cook White Beans, Thaw Bone Broth, Dry Apples, Make Water Kefir

Thursday

Friday

  • Breakfast: Fried Eggs, Kale with Garlic, Melon
  • Lunch: Chicken Salad over Mesclun Lettuce, Fruit, Salad Turnips
  • Dinner: Lentil Stew, Traditional Sauerkraut, Simple Salad, Sourdough Bread, Roasted Garlic
  • To Do: Feed Sourdough, Make Yogurt, Make Bone Broth, Soak Anasazi Beans

Saturday

Sunday

  • Brunch: Out
  • Dinner: Anasazi Bean Chili, Simple Salad, Real Pickles, Raw Cheese, Sour Cream, Fresh Fruit
  • To Do: Clean the Fridge, Shop at the Market, Plan Meals

Snacks for the Week

  • Boiled Eggs
  • Apples
  • Pears
  • Melon
  • Carrots
  • Turnips
  • Celery

I too love greens and garlic and can eat them all day anytime, no prob!! I got some awesome turnips the other day and used the greens with eggs and some were tossed in ribbons into a salad!!

I just went back to the farmers market and bought some more. The radish greens havent been looking so good though:-(
