Last week, I described how I planned to take the new Surf & Turf cooking class hosted by Ann Marie of Cheeseslave (view my post here), and she was kind enough to offer Nourished Kitchen readers an opportunity to enter a giveaway and win a registration for her new cooking class.  So if you’re interested in the class, but sitting on the fence unsure whether its right for you, entering this giveaway is an excellent opportunity – and it’s a way for me to give back to my readers: you guys.  I’m really excited about this class, and looking forward to participating in it – particularly the sections covering palatable preparation of nutrient-dense foods like organ meats or lightly cooked seafoods.

    What can I say? I am older and want my latter days to be better than my former days. I want to see my grandchildren in happy marriages and hold my great grandchildren in my arms. I desire to be as healthy as I can be so that I can enjoy the rest of my days. I have been cooking and baking for over 50 years (started when I was 13) and I know that I still have a lot to learn. My heart and hands are ready to learn. Thank you young women for this food revolution I am seeing and reading about, and yes, even trying a lot of the recipes.

    This class sounds absolutely amazing. I have just recently discovered the powerful and healing world of whole foods and their importance in changing our lives and culture. The class that Ann Marie is providing sounds really wonderful – I am always hoping to learn so much more about food and proper ways of preparing it.     As someone who has waffled between whether or not I want to be a vegetarian (or at least questioned how much of my diet should be meat-based), I would LOVE to take this class and learn more about the benefits of eating protein and meat-based fats. I am a Masters student in Clinical Nutrition and feel that this material would be a wonderful supplement to my studies (and hopefully I can one day pass on the information to my clients/patients!).     I would be so excited to learn more about cooking fish and meat. I have undiagnosed hypoglycemia and I require a lot of protein on a very regular basis. I love to cook and have been slowly gaining skills in Traditional cooking over the past five years or so but would love the boost of this class. I also teach childbirth classes and work with families preconception and pregnant and am able to share knowledge with them. Teaching me is not teaching one person.     I have never been a big fan of eating meat, and I’ve never really learned how to cook most of it. But health issues have forced me to adopt a diet with more fat and protein, and fewer carbohydrates. I am serious about doing what ever it will take to regain my health, and eating meat is going to be a part of that. So I need to learn how to cook meat so that I will appreciate it’s flavor and texture. Plus, my husband is getting tired of chicken, salmon, and hamburgers! I am also the aspiring radical homemaking mama of a spirited & bright toddler, and I have been on an arduous journey for vibrant health since the birth of my daughter three years ago.     Although I have been eating meat again for about a year and a half, I am still not very confident in handling or preparing it. My daughter and I eat simply (and mostly vegetarian) on the days when my husband (a former chef) is not home to help prepare meals, else we eat leftovers. I love to read cookbooks, food blogs and anything related to food & nutrition, but putting what I have learned into practice is another story! I have always been the baker and my husband has always made the majority of our family meals. I would really love the opportunity to acquire some real skills! I long to cook REAL food for myself and my family! :)

    My family and I live in New Zealand where we are in the nascent of the movement back to traditional REAL NOURISHING food and I want my family and myself to be a part of this movement!! I suffer from psoriasis, my step-children have athsma and ezcema respectively, and I would like to do this course as part of trying to move my family to a state of real health. My husband (who is a professional chef) and I discussed whether we were able to spend the money to enroll on this course but we decided against it as $120 USD is a lot of money and we can’t afford it at this time. My husband is making a real effort in his workplace to change the way he cooks and talks (to customers and other chefs) about his food to promote the advantages of grass-fed, free range animal products and the consumption of animal fats. Doing this course would help him with this change by giving him some practical techniques and education to support his endeavour. Cheers :)

    My 8 year old son and I are gluten free and need to go grain free. I would like to learn to use and optimize all the cuts of meat and offal to maximize my food dollar. Learning the best ways to purchase high quality meat and seafood is something I would like to know more about. Providing the highest quality of food and maximizing the economics of it all is high on my priority list (I’ve been choosing nutrient dense foods for over 6 years, but need to learn how to use the more economical cuts and parts as well as learning about the more nutrient dense organ meats so we can continue to afford eating wells especially since we need to cut out grains!!)     What do I want to learn? I want to learn how to touch all of the meats, fish, etc. so that I am no longer afraid to use them. I have very little confidence in the kitchen when things are “different” but I truly know that they are better for myself and my family. I need to get over that hump. I conquered a butternut squash last fall and it changed my life, now I want to conquer the meats, broths, seafood, organ meats, etc., and incorporate them in my life like I have with the grilled cheese sandwich (grassfed, raw butter, organice cheese and spelt bread of course!)

    Hey there, I am not tech savy… don’t quite get tweeting yet, and I think I am already getting all of the newsletters etc. I think I did become a FB fan though..have to double check that one. Have emailed to a friend, but need to email a few more. I have 5 little kiddos (triplets age 6.5, and a 3.5 and a 2.5 year old). I am doing everything I can to feed them well. I have little free time, and I devote much of it to cooking. My kids love to cook, and they are still in the impressionable stage, so I am trying to try all this new stuff before they can argue with me or know any different (ie organ meets). I didn’t grow up eating this way, but I can tell you I feel so great and my kids seem pretty darn healthy (knock wood). I am taking the NK class, and I have to admit I am only on lesson 4. LOVE that I can just have a video waiting for me when I have the time to watch it…no pressure. I have managed to try everything so far as I can do it at my own pace. I have wanted to go back to school for nutrition, but there is no way I have the time or the $…this class is totally doable. Anyway, that is my rant (sorry for ranting) I met you guys out in Chicago, and I hope to see you in PA (although not sure I will be able to swing it this year). I am learning Nourishing Our Children lecture, and changing school lunches in my town..I am totally into this and would love to be able to learn more about surf and turf and spread the good word!!     I was a vegetarian for 10 years and am now recovering from a poor vegetarian diet. I learned about traditional foods the WAPF thanks to the help of the wonderful people at Three Stone Hearth in Berkeley, but am still apprehensive about cooking a lot of meat.     I prepare fish the same way every time. I certianly enjoy it but I feel very limited. I would hope to learn how to prepare fish in a variety of ways, was well as beef. We don’t eat too much beef but it would be nice to have it and when we do it would be an awesome cut/product.

    Why would I love to win this class? Let me count the ways:

    1.) This sounds like a phenomenal class that will help me understand how to prepare a wide variety of healthy raw and cooked meals.
    2.) I want to get my teenagers eating more seafood and start eating organ meats. If I have more recipes and preparation techniques, sauce ideas this will make it more successful.
    3.) I am struggling to put together “meals” as opposed to individual foods. This course sounds like it will help.
    4.) I have been chronically ill for many years. Together with other holistic, naturopathic treatments and help my final guide to wellness will be my ability to get nutritious, wholesome, healing, nutrient dense foods into my body. I need to understand and investigate as many avenues as possible towards this end.
    5.) Nutritious foods don’t need to taste bad as so many people think. Exploring and trying a wide variety of recipes and preparation techniques will help me to prepare tasty, nutritious foods.
    6.) This sounds like a very high quality class that covers all of the necessary topics for understanding what proper nutrition is really about and hot to achieve it.
    7.) I love breads but have not been able to eat them lately because of my concerns about phyates. Grain free breads might be my way around this concern (as well as sprouting and fresh grinding of grains)
    8.) Shopping and stocking up – perfect. That way I can have all the necessitities on hand and am always able to make what I want.
    9.)Who wouldn’t want to win this class? Only those that way to live a life filled with poor health and weakness. I want a life full of vitality and energy.

    Hi!

    Please pick me!!! This class looks tremendously beneficial and throrough and just gets me excited for food in unimaginable ways. I am 23 yr-old college student who just recently starting eating meat again(Thank God).

    After a 2 yr stint of dedicated vegetarianism and brief periods of veganism, I feel this class would put me on the fast track to great health and really start to get my recipe knowledge foundation grounded.

    Learning how to prepare organ meats in a variety of ways is definitely one of the highlights for me since im currently stuck on my raw liver shake. Also having the ability to buy half a cow and store it so I can save much needed college financials away is priceless.

    Seafood is uncharted water for me and getting this class in would clearly shine a light on that food group that unless prepared for me doesn’t really go in my shopping cart.

    Lastly I am a bread-LOVER! This is definitely my weakness when it comes to true nutrition, I need sourdoughs, ryes, focaccia, tortillas with everything but im getting better so when I hear there is going to a grain-free section covered its like waking up singing a great song- just beautiful.

    I love what this course has to offer! I drastically changed my diet and way of life after having my 22 month old. I feel so much better but still struggle with menu ideas and certain areas.
