New to Einkorn?
Einkorn is an ancient grain – and the first wheat cultivated by early neolithic man; however, there’s some evidence that epipaleolithic man also consumed Einkorn. It is a non-hybridized original wheat with just 14 chromosomes (compared to 42 for modern wheat). Containing a gluten molecule that is functionally different from modern wheat, many people can tolerate Einkorn where they cannot tolerate modern wheats or spelt.
Einkorn can be used at a 1:1 ratio for regular flour in basic recipes for breads, cakes and cookies.
