style="font-size: x-large;">Did you know </span>that a simple process can actually increase the nutrients your body absorbs from whole grains?  Or that that self-same process can actually deactivate irritating antinutrients found in grains?  Indeed, despite the current emphasis on whole grains by the dietary powers-that-be, consuming whole grains doesn&#8217;t do much for you and, in fact, might even be hurting your health; that is, unless they&#8217;re <em>properly prepared</em>.  Many preindustrial societies across the world ate grains, and thrived, but the key was that the grains they did eat were intuitively prepared for optimal nutrition.</p><p>There&#8217;s even some evidence that paleolithic man consumed ground grains with starchy roots to make a <a
href="http://www.dailymail.co.uk/sciencetech/article-1321844/Stone-Age-man-ate-bread-just-meat.html" target="_blank">primitive bread as early as 30,000 years ago</a>.  What&#8217;s important, anyway, is that they weren&#8217;t pouring a bowl of bran flakes in the morning and calling it good; rather, they were preparing whole grains through a process that required pretreatment before cooking: soaking, sprouting or fermentation.  These processes rendered the grains they did consume more digestible and their nutrients &#8211; particularly minerals like iron and zinc &#8211; more available, and, in the case of sourdough bread, actually increased the amount of folate found in the grain.</p><p>So if you&#8217;re not ready to jump on the grain-free bandwagon, and you still find a place for traditional foods like breads and porridge in your daily life, you should check out <a

href="http://nourishedkitchen.com/sour-pickles/">sour pickles</a> and sprinkling salt into the centers of <a
href="http://nourishedkitchen.com/morrocan-preserved-lemons/">Moroccan preserved lemons</a>.  And for those of you who&#8217;ve participated in this month&#8217;s <a
href="http://nourishedkitchen.com/preserve-the-bounty/">Preserve the Bounty Challenge</a>, you&#8217;re already well on your way to learning the lost arts of traditional vegetable preservation methods like fermentation.  Besides, the process of lactic acid fermentation is not only time-honored, earning steadfast esteem in the traditional culinary heritage of cultures across the globe, it is also one of the most important aspects of healthy cooking anyone can master.  The mere act of fermentation drastically improves the nutritive qualities of the foods we consume &#8211; which is why they&#8217;re featured with fair frequency at Nourished Kitchen.</p><p>I am so excited about this giveaway and, if I can be truly honest, a bit jealous &#8230; a bit covetous, because Cultures for Health has put together an impressive kit for one Nourished Kitchen reader: two vegetable fermentation masters, the famed book <em>Wild Fermentation</em> by Sandor Katz, Caldwell&#8217;s vegetable starter culture, a mandolin slicer and Celtic sea salt.  It took me a long time to acquire, over the years, all these individual items and I&#8217;d have saved an awful lot of failed krauts and pickles if I&#8217;d had the good luck to find the materials altogether in one place. From the very beginning of my journey into real and traditional foods, I&#8217;d followed Sandor Katz&#8217;s legendary book: Wild Fermentation which now lays dog-eared on my nightstand (yes &#8230; I read cookbooks in bed, and in the bath but, curiously, not in the kitchen).  Then I found vegetable fermentation masters which are simple glass jars equipped with an airlock and this combination ensures more even and reliable ferments.  I&#8217;ve used mine to make sauerkrauts, cucumber pickles, preserved lemons, probiotic apple and beet relish, sour turnips, sour beets, pickled daikon radish and many other vegetable ferments. href="http://nourishedkitchen.com/viili-piima-fil-mjolk/">cultured milks of Scandinavia</a> and the role they play in the culinary traditions of the region.  Viili, filmjölk and piimä all share a similarity and, in many ways, are best described as yogurt though they each offer their own, unique, characteristics.  Piimä is faintly cheese-like in flavor and drunk as a beverage while viili is gelatinous and mild with an unusual ropey character,while filmjölk is tart and versatile.  Culturing dairy decreases lactose or milk sugar while also increasing B vitamins &#8211; including folate, that vital nutrient critical to the proper growth and development of unborn babies.</p><p
style="text-align: left;">What makes these three cultured dairy products so peculiar and unique, at least to most people residing outside of northern Europe and Scandinavia, is that they are mesophilic in nature; that is, unlike yogurt, they thrive when cultured at room temperature.  This unique characteristic makes them remarkably easy and efficient to use in your kitchen.  The only trick is finding a source, since none of the three cultured dairy foods is regularly available in the dairy case of your local grocery store.</p><h3 style="text-align: left;">How to Make Viili, Filmjölk and Piimä with Fresh Milk</h3><p
style="text-align: left;">Many cultured dairy enthusiasts wish to prepare viili, filmjölk and piimä from fresh raw milk, but doing so is tricky as, overtime, the natural beneficial bacteria present in fresh milk will overtake the strains introduced by the starter.  For this reason, unless you keep a pure seed starter.  You accomplish this by scalding a pint of fresh milk, thus destroying heat-sensitive beneficial bacteria strains naturally present in the milk.  Cool this milk to room temperature and introduce your viili, filmjölk and piimä starter culture and allow it to ferment at room temperature for about one day.  This yogurt is your pure seed starter; take two tablespoons or up to one-quarter cup of this starter and add it to one quart fresh milk &#8211; allowing the milk to ferment at room temperature for roughly one day or until the cultured milk separates cleanly from the side of a mason jar when tilted.  Use only the pure seed starter in culturing your fresh milk yogurt, and take great care to save at least two tablespoons of pure seed starter to begin your next batch lest you allow the strains of bacteria in your fresh milk to overtake the starter.  The  pure seed starter must be recultured at least weekly.</p><p
style="text-align: left;">Room temperature yogurts like viili, filmjölk and piimä produce more consistent results when used with fresh milk than classic thermophilic yogurts which require a constant warm temperature to properly ferment and turn runny when used with fresh milk.  If you do not wish to use fresh milk to prepare these yogurts, you may use pasteurized milk (not ultra-high temperature) if you scald it first and cool it to room temperature.</p><p
