The mixture of 3 c oat flour + 2 c buttermilk is really gooey - should I be soaking it overnight even though the flour is already sprouted? Will it stiffen up the longer I wait? I can't imagine being able to roll it out with the current consistency.

Thanks Jenny! You can "grind" oats in a blender if you don't have a grinder. :-)

Hey, Just a tip… You can “grind” oats in a blender if you don’t have a grinder. <img

It is delicious and has a wonderful texture. Next morning add enough oat flour or whole wheat flour (I use white stone ground) to make a sfiff dough. I add 1/2 stick of cold butter grated with a cole slaw grater (the big side) and add 4 1/2 teaspoons baking powder. Not baking soda! I don't add any baking soda. These turned out beautiful and delicious. Thanks orginal poster for posting this. I realize that I changed it up but this is what works for me.

You don’t need oat flour for these! Just use plain ole old fashioned oatmeal! I know how to cook. I had a disgusting mess and wasted perfectly good ingredients.

Am I missing something? 3c of oat flour and 2 c of buttermilk, soaked, is not anywhere near something that can be “patted, rolled and cut” into biscuits. Want to make sure I don't over-soak :)

Does soaking overnight qualify as anywhere from 12-24 hours? Want to make sure I don’t over-soak <img
